Just getting started

Chain and gearing.

G'day all, I currently run a 96 Tenere and find that I am due for a new chain and sprocket. What i want is a set up that will give a comfortable cruising speed, but better range. Any suggestions welcomed. Plus any tips on setting a rack to keep a set of soft panniers away from the plastic would also be helpful.
